Easy rainbow pancake recipe
With Pancake Day just around the corner, it's time to get excited about everyone's favorite treat! The big question is: what's your favorite topping? This year, why not add a splash of colour to things with rainbow pancakes? They're incredibly easy to make, and your kids will absolutely love seeing—and eating—all these vibrant, colourful treats!
Our recipe serves approximately 4.
Ingredients

200g self raising flour

1 tsp baking powder

2 tbsp caster sugar
-
½ tsp vanilla extract
-
200ml milk
-
3 eggs
-
25g butter

Selection of food colourings of your choice
Ready, steady, cook!
Making your batter

Add all the ingredients into a bowl (except the food colouring) and whisk it together until smooth to create a batter.

Divide the batter into bowls – make sure you split it as per the amount of colours you are creating.

Add a couple of drops of food colouring to each bowl. All food colouring is different so you may need to add more or less depending on the brightness of the colour you’d like your pancakes to be.

Remember to leave one plain if you’d like to include a classic pancake!
Cooking your pancakes

Melt a small knob of butter in a large non-stick frying pan - keep the heat medium to low.

Once the butter has heated up (you’ll see it start to bubble), add spoonfuls of the pancake batter into the pan and shape into 4-5cm circles with the back of your spatula.

Cook for 2-3 mins then flip over and cook the other side for another minute or until cooked through and ever so slightly golden.
Serving your pancakes

Stack your pancakes by alternating colours to create a fun rainbow effect.

Choose your topping... there are so many to choose from including fresh fruit, cream, ice cream or maple syrup!
