Child Friendly Recipe - Beef and Root Vegetable Casserole
This week we have another tasty recipe to share with you which is used in our own nurseries. It's packed with all sorts of tasty ingredients and is so simple to cook.
It doesn't get more wholesome than beef and root vegetable casserole. And it's sure to leave your little ones with an empty plate and wanting more! Check out the ingredients and recipe below.
Ingredients:
- Carrots – 60g
- Parsnips – 60g
- Frozen Diced Swede – 60g
- Dried Mixed Herbs – 1.2g
- Boiling Water – 400ml
- Chopped tomatoes – 160g
- Large Spanish Onions – 40g
- Ground Black Pepper – 0.6g
- Small Diced Stewing Beef – 300g
- Gravy – 50g
- Fresh Potato – 400g

Ready, steady, cook!

Firstly, dice the beef and add this to a pan and dry fry.

Then, add the diced onions, diced carrots, swede, parsnips, black pepper and mixed herbs and cook for 10 mins.

Next, add the chopped tomatoes and water, then bring this to the boil and thicken with the gravy mixture.

Put the casserole mix into an oven proof dish and braise for about one and a half hours (until the beef is tender)

Finally, serve this with the cooked new potatoes that have been cut in half.
For the vegetarian, please changed the diced beef for broccoli and cauliflower.
